Ricotta toast has become quite trendy over the past couple years, well since the pandemic. Some might even say that it trumps the avocado toast. I tend to love both, since they are easy, nutritious and versatile. You can make ricotta toast savory or sweet, just depends on the toppings you add. Since Valentine's Day is just around the corner, we thought we would make this easy Strawberry Ricotta Toast.
We jazzed up the simple sourdough toast and plain ricotta with ripe strawberries, baby cucumbers, pistachios and drizzled it with a touch of honey. Finished with a sprinkle of sea salt and fresh crushed pink peppercorn berries for a hint of unique peppery spice. These toppings worked really well together and complimented the creamy texture of the ricotta. The flavors are vibrant and refreshing with a hint of sweetness, a bit of salt and a touch pepper.

Ingredients for this Recipe
Sliced Bread - we used pre-sliced sourdough bread. Sliced Italian bread would be wonderful too. You can used hearty nut or seed breads as well. The nutty bread would give this recipe an added toasted nutty flavor.
Ricotta Cheese - we used plain, full fat ricotta. You can use low fat if you prefer to cut down on fat and calories.
mini cucumber - we prefer mini cucumbers. They are less bitter and easy to prepare. No need to peel and seed. Just wash and slice. Optionally, you can make it festive and cut out heart shapes with a mini heart shaped cookie cutter.
strawberries - ripe strawberries thinly sliced into heart shapes. When you slice strawberries, they naturally have a heart shape. We went a step further and used a cookie cutter to define the heart shape at the top.
unsalted pistachios - roughly chopped. You can use other nuts if you prefer. Walnuts, pecans or almonds would be great as well.
honey - just a little drizzle of honey adds the right amount of sweetness.
sea salt - sprinkle on top to season.
pink pepper corns - crushed pink peppercorn berries for unique peppery flavor. If you don't have pink peppercorns, you can fresh ground black pepper or eliminate it.
How to make this easy strawberry ricotta toast
Lightly toast bread.
Spread ricotta cheese onto each slice of toast.
Top with sliced cucumbers, strawberries, and pistachios.
Drizzle with honey and season with salt and pepper to your liking.
Optional – use small heart shaped cookie cutters to cut strawberries and cucumbers into heart shapes to add a Valentine’s Day theme.

- 4 slices of bread we used sourdough
- ½ cup ricotta cheese
- 1 mini cucumber – sliced
- 4-5 strawberries – sliced
- 2 tablespoons unsalted pistachios – chopped
- 2 tablespoons honey
- ½ teaspoon sea salt
- ½ teaspoon pink pepper corns - crushed
Instructions
