LARGE BUTTER BEAN AND FRESH MIXED TOMATOS WITH A SIMPLE DRESSING

If you are looking for a healthy salad that is rich in flavor and makes a satisfying meal, this butter bean and tomato salad is it. It is loaded with large vegetable protein packed butter beans and dark red kidney beans. It is also loaded with fresh cherry tomatoes and rich leafy butter lettuce. The chopped fennel and fresh dill and layers of unexpected flavor to each bite. The salad dressing is a simple vinaigrette with a slight peppery flavor and a hint of spice from the red crushed pepper.

Because this salad is full of beans, it is very filling. It makes a fantastic quick and healthy lunch or the perfect salad course.  It can be placed on the dinner table family style, and everyone can help themselves. 

INGREDIENTS YOU WILL NEED FOR THIS RECIPE

 Bean Salad

chopped butter lettuce – can use any lettuce, Romaine would be great too.

butter beans – canned, drained and rinsed

dark red kidney beans – canned, drained and rinsed

cherry tomatoes – sliced, grape tomatoes would be perfect too.

fennel – fennel has a great refreshing anise flavor. If you do not care for fennel, celery would be a great substation. It you give the salad a contrast in texture with the crunch of the celery.

fresh dill – adds another layer of herby flavor, if you do not like the distinct flavor of dill, you can add fresh parsley or eliminated it.

sliced scallion – green onion.

Salad Dressing

light olive oil

white balsamic vinegar

paprika, sea salt, fresh ground black pepper, and red crushed pepper

HOW TO MAKE EASY BUTTERBEAN SALAD

Place all salad ingredients into a large mixing bowl

Place all salad dressing ingredients into a high-powered electric blender and blend until combined.

Dress the salad and transfer onto serving plates.

Salad Dressing

  • ½ cup light olive oil

  • ¼ teaspoon red crushed pepper
