Ingredients
  

Bean Salad

  • 2 cups chopped butter lettuce
  • 1 can butter beans drained and rinsed
  • 1 can dark red kidney beans drained and rinsed
  • 1 cup sliced cherry tomatoes
  • ¼ cup fennel cubed
  • 1 tbsp chopped fresh dill
  • 1 sliced scallion

Salad Dressing

  • ½ cup light olive oil
  • ¼ cup white balsamic vinegar
  • ½ teaspoon paprika
  • ¼ teaspoon sea salt
  • ¼ teaspoon fresh ground black pepper
  • ¼ teaspoon red crushed pepper
Instructions
 
  • Place all salad ingredients into a large mixing bowl
  • Place all salad dressing ingredients into a high powered electric blender and blend until combined.
  • Dress the salad and transfer onto serving plates.
