Bean Salad
- 2 cups chopped butter lettuce
- 1 can butter beans drained and rinsed
- 1 can dark red kidney beans drained and rinsed
- 1 cup sliced cherry tomatoes
- ¼ cup fennel cubed
- 1 tbsp chopped fresh dill
- 1 sliced scallion
Salad Dressing
- ½ cup light olive oil
- ¼ cup white balsamic vinegar
- ½ teaspoon paprika
- ¼ teaspoon sea salt
- ¼ teaspoon fresh ground black pepper
- ¼ teaspoon red crushed pepper
Place all salad ingredients into a large mixing bowl
Place all salad dressing ingredients into a high powered electric blender and blend until combined.
Dress the salad and transfer onto serving plates.
