The Original Bee’s Knees Cocktail

The Bee’s Knees cocktail is a classic drink that has been around for nearly a century. It’s a simple and refreshing combination of gin, lemon juice, and honey. The name “Bee’s Knees” is believed to have originated during the Prohibition era, when people would use honey to mask the taste of inferior gin.

Peach Bee’s Knees Cocktail

In this recipe we used our bourbon peach glaze that we made for another recipe, and we had some extra to use up. It has a syrup consistence so we thought it would work well in this recipe and it did! We just swapped out the honey with this peach flavored glaze. If you do not want to make the bourbon peach glaze, you can simply use just peach preserve.

Ingredients:

  • 3 ounces gin (use your favorite gin)
  • 2 ounce fresh lemon juice
  • 1 1/2 ounces bourbon peach glaze or peach preserve
  • Ice cubes
  • Peach slices or ball, or lemon wedges for garnish (optional)

Gin – Use your favorite gin brand. We used Hendrick’s Gin. According to the manufacturer “HENDRICK’S is an unusual gin created from eleven fine botanicals. The curious, yet marvellous, infusions of rose & cucumber imbue our spirit with its uniquely balanced flavour resulting in an impeccably smooth distinct gin.” However, you can use whatever gin brand you prefer.

Lemon Juice – We prefer to use freshly squeezed lemon juice.

Bourbon Peach Glaze – This is our recipe that we have provided a link to above. You can simply use a heaping tablespoon of peach preserve and give the cocktail an extra shake to blend and break up the preserve. You can also strain the cocktail if there are any peach bits left from the preserve, or just leave it.

Garnish – Use ripe, juicy peaches as garnish if they are in season. If not add a lemon slice.

Instructions:

  1. Fill a cocktail shaker with ice cubes add the gin, fresh lemon juice, and peach glaze.
  2. Shake the mixture vigorously for about 15-20 seconds to chill the cocktail.
  3. Strain the cocktail into a chilled glass.
  4. Garnish with peach slices or ball or lemon wedges if desired.
  5. Serve and enjoy!
