2 beefsteak tomatoes (or large heirloom if available), sliced ¼-inch-thick
1 small red onion, sliced length-wise
1 cup crumbled feta
½ cup good black olives - pitted
Fresh thyme leaves for garnish

¼ cup balsamic vinegar
¼ cup light olive or avocado oil
1 teaspoon fresh thyme leaves
½ teaspoon honey
¼ teaspoon kosher or sea salt salt
¼ teaspoon freshly ground black pepper
How to Make this Simple Salad
- Balsamic Vinaigrette: In a small bowl, whisk together the balsamic, thyme leaves, honey, salt and pepper. Slowly whisk in the olive or avocado until well combined.
