Ingredients for this Recipe
- 1 pound ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning mix
- 1 (15 oz) can diced tomatoes
- 1 cup shredded cheddar cheese
- ¼ cup sour cream
- 2 cups beef broth
- 8 oz. pasta (such as elbows or shells)
- Salt and pepper to taste
- Shredded cheese, sliced green onions, avocado, and/or sour cream for garnish (optional)
How to Make One-Pot Taco Pasta
- In a large pot or deep skillet, cook the ground beef over medium heat until browned. Add the diced onion and garlic and cook until the onions become translucent.
- Mix in the taco seasoning and coat the beef mixture. Mix well.
- Add the diced tomatoes and beef broth. Bring the mixture to a simmer.
- Add the pasta to the pot and stir to combine. Simmer for about 15-20 minutes, or until the pasta is tender, stirring occasionally.
- Taste the beef taco pasta and season with salt and pepper as needed.
- Once the pasta is cooked to your preference, remove the pot from the heat.
- Mix in the grated cheese and sour cream until fully melted and creamy.
- Transfer to serving dishes and garnish with shredded cheese, sliced green onions, avocado and/or a dollop of sour cream if desired.
NOTE: Shred the cheddar cheese yourself. Avoid using pre-shredded packaged cheese. The pre-shredded packaged cheese often contains a coating that prevents the cheese from clumping in the bag. However, this coating also prevents the cheese from melting completely, in our experience.
