Let’s take a break from apples and focus on pears and make a pear coffee cake. I have made the most delicious, moist and flavorful Spiced Pear Coffee Cake that I would love to share with you. There are countless recipes out there for apple desserts. Apple pies, apple crumb, apple cake, apple this and apple that. Sure, apples are fabulous and there is a lot of variety and opportunity to make many different recipes with apples, however, pears are not so popular.
Apples and pears are harvested at the same time. Most farms have both apple trees and pear trees, but the apple trees outnumber the pear threes by far. And everyone goes “apple picking” and no one goes “pear picking”. Honestly, it makes me a bit sad how underrated pear are.
Not here at Thyme of Season! This cake did not have a chance. Truth be told, I have been baking a lot more than I usually do since staring this blog and I just can’t have all these baked goods around. So, I have been sharing. How to make the coffee cake
Ingredients - For the Cake
- All-purpose flour
- Sour cream - full fat
- Pears – peeled and cubed
- Whole milk – room temperature
- Brown sugar
- White sugar
- Vegetable oil
- Eggs – room temperature
- Unsalted butter – melted
- Lemon juice - freshly squeezed
- Vanilla extract - pure extracts, avoid imitation vanilla extract
- Baking powder
- Cinnamon
- Baking soda
- Orange extract - use pure or natural orange extract
- Ground ginger powder
- Nutmeg
- Cardamom
- Salt
Recipe for the Crumb Cake Topping
- All-purpose flour
- Brown sugar
- Unsalted butter – room temperature
- Zest of one mandarin or small orange
Directions
Pre-heat oven to 350. Grease 9-inch spring form pan and set aside.
Peel and cut pears and set aside.
Stir the topping together with a fork until crumbles form, set aside.
Place flour, brown sugar, white sugar, baking powder, cinnamon, baking soda, ginger, nutmeg, cardamom and salt into a large mixing bowl and whisk ingredients until fully combined.
In a separate mixing bowl add sour cream, milk, oil, melted butter, eggs, lemon juice, vanilla and orange extract. Whisk together until blended.
Add wet ingredients to the dry ingredients and gently mix together. DO NOT overmix.
Add the pears to the batter and lightly fold in.
Place half the batter into the spring form pan and add half the crumb topping. Add remaining batter to the pan and top with remaining crumb topping.
Bake for about 45-50 minutes or until knife comes out clean.
Let cool completely before serving. Serve with caramel sauce and whipped cream if desired.
