PANZANELLA SALAD WITH RIPE PEACHES AND FRESH TOMATOES
Are you looking for a delicious and healthy salad recipe that is both sweet and savory? Why not try this summer inspired peach and tomato salad that is the perfect combination of freshness and flavor. The juicy peaches are perfectly complemented by the tangy tomatoes and make for a great side dish or a light lunch option.
To make this salad, simply chop up some ripe peaches and juicy tomatoes, toss them together in a bowl, and drizzle with homemade vinaigrette. We added fresh basil, a little bit of jalapeno for spice and small mozzarella cheese ballas for extra flavor.
With ripe summer peaches and tomatoes being in season I thought this peach and tomato panzanella salad would make a great side dish. The sweetness of the peaches and tomatoes are balanced by the acidity in the simple white wine dressing.
Each bite has a hint of spice from the jalapenos. I used very little but just enough. The salad is a bright complement for grilled chicken or salmon.
INGREDIENTS for THIS RECIPE
Bread Salad
- diced peaches
- sliced mixed cherry tomatoes
- toasted sourdough bread – cubed
- small pearl mozzarella cheese balls
- thinly sliced basil
- jalapeno pepper chopped
- scallion sliced
Salad Dressing
- light olive oil
- white wine vinegar
- sea salt and fresh ground black pepper
HOW TO MAKE PEACH AND TOMATO SALAD
Cut, chop and slice all your ingredients. Lightly toast the sourdough bread and cut into cubes.
Place all dressing ingredients into a blender and blend well.
Combine all salad ingredients into a large bowl. Add the dressing and mix well. Transfer into a serving bowl.

Peach and Tomato Bread Salad
Bread salad is a traditional Tuscan bread salad enjoyed mostly during the summer.
Ingredients
- Panzanella Salad
- 2 cups diced peaches
- 2 cups sliced mixed cherry tomatoes
- 2 slices of toasted sourdough bread – cubed
- 1 cup small pearl mozzarella cheese balls
- 1 tablespoon thinly sliced basil
- 1 tablespoon jalapeno pepper chopped
- 1 scallion sliced
- Dressing
- ½ cup light olive oil
- ¼ cup white wine vinegar
- ½ teaspoon sea salt
- ½ teaspoon fresh ground pepper
Instructions
