We made this recipe from scratch, and it is just as easy and has a much better, made from scratch taste. We think so, anyway. This cake is moist, fluffy, with the sweet, tangy flavor of pineapple and sour cream with a slight hint of coconut. It is a must try this summer if you love tropical flavors.
Ingredients You'll Need
You will need the following ingredients to make this tropical flavored pineapple bundt cake from scratch:
- 2 and ⅔ cups of all-purpose flour
- 2 teaspoons of baking powder
- ¼ teaspoon of baking soda
- ¼ teaspoon of salt
- 1 cup of unsalted butter, softened
- 2 cups of granulated sugar
- 3 large eggs
- 2 teaspoons of vanilla extract
- 1 teaspoon coconut extract
- 1 cup of sour cream
- 1 and ½ cups of crushed pineapple, drained
- 2-3 tablespoons of powdered sugar - for dusting
Baking Instructions
Follow these steps to make your pineapple bundt cake:
1. Preheat your oven to 350°F (175°C) and grease a bundt pan. Set aside.
2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
3. In a large bowl, beat the butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla and coconut extracts.
4. Gradually add the dry ingredients to the butter mixture, alternating with the sour cream, beginning and ending with the flour mixture.
5. Fold in the crushed pineapple until evenly distributed.
6. Pour the batter into the prepared bundt pan and spread it evenly.
7. Bake for 50-60 minutes, or until a toothpick inserted into the center of the cake comes out clean.
8. Allow the cake to cool in the pan for 10-15 minutes, then invert it onto a wire rack to cool completely.

Once your pineapple bundt cake has cooled, you can dust the bundt cake with powdered sugar.
