Ingredients Needed for Parmesan Mushroom Rice

To prepare Parmesan Mushroom Rice, you’ll need the following ingredients:

  • 1 cup of arborio or long-grain rice
  • 1 cup of chicken or vegetable broth
  • 1 cup whole milk
  • 1 cup of fresh baby Bella or cremini mushrooms, sliced
  • 1/4 cup of freshly grated Parmesan cheese
  • 1 small onion, finely chopped
  • 2 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • 1/4 teaspoon salt and pepper, (optional – plus more to adjust)
  • 1/2 teaspoon finely chopped fresh parsley
  • Shaved Parmesan cheese

Step-by-Step Cooking Instructions

1. Heat the olive oil in a large pan over medium heat. Add the chopped onions and minced garlic, and sauté until they become translucent.

2. Stir in the sliced mushrooms and cook until they release their moisture and start to brown.

3. Add the rice to the pan and cook for a few minutes, ensuring each grain is coated with the oil and flavors from the vegetables.

4. Pour in the chicken or vegetable broth and milk, season with salt and pepper, and bring to a boil.

5. Reduce the heat to a simmer, cover the pan, and cook for about 15-20 minutes or until the rice is tender and the liquid is absorbed.

6. Remove the pan from heat and gently stir in the parsley and grated Parmesan cheese until it melts and coats the rice evenly. Top with shaved parmesan cheese and serve.
