Ingredients:
- 4 cups mixed baby greens
- 1 large orange, skin removed and sliced – we used Cara-Cara oranges
- 1/2 cup fennel, thinly sliced
- 1/2 cup canned chickpeas, drained and rinsed
- 1/4 cup Kalamata olives, pitted and roughly chopped
- fresh ground sea salt and pepper to taste
Instructions:
- Start by preparing the oranges. Peel them and remove the pith and skin, then slice them into wedges or rounds. Set aside.
- Next, prepare the fennel bulb. Trim off the stalks and fronds, then cut the bulb in half. Remove the tough core and thinly slice the bulb.
- In a large bowl, combine the baby greens, sliced oranges, fennel, Kalamata olives and chickpeas. Toss gently to mix.
- Transfer the salad to a serving platter or individual plates and garnish with a few extra sprigs of fresh parsley.
