Why Make Chocolate Lava Cake with Brownie Mix?

Using a brownie mix as the base for your chocolate lava cake is super convenient. Not only does it save you time and effort, but it also guarantees a consistently delicious result. Brownie mixes are readily available at grocery stores and provide a reliable and foolproof way to get that perfect fudgy texture.

Ingredients:

  • box of brownie mix – use your favorite simple, plain brownie mix brand. Avoid any with fudge or chocolate chips.
  • unsalted butter, thinly sliced
  • eggs
  • egg yolks – save the egg whites
  • chocolate chips – milk, semi-sweet or dark chocolate, whichever you prefer.
  • vanilla ice cream, whipped cream powdered sugar, and/or fresh raspberries (optional, for serving)

Instructions:

  1. Preheat your oven to 350°F and grease a 12-cup muffin/cupcake pan with cooking spray.
  2. Place the chocolate chips and butter into a microwave safe bowl and microwave in 30 second intervals until melted and smooth.
  3. In a mixing bowl, add eggs and egg yolks and whisk together until foamy.
  4. Slowly add the brownie mix into the egg mixture and continue mixing.
  5. Add the melted chocolate chips and butter mixture to the batter and gently fold it in.
  6. Pour the brownie batter into the prepared muffin/cupcake pan, evenly distributing the batter.
  7. Bake cakes until edges are set but the center is still slightly giggly, about 10-12 minutes.
  8. Allow the lava cakes to cool for a few minutes. Then, using a knife, gently loosen the edges of each cake and invert them onto serving plates.
  9. Serve the chocolate lava cakes warm, either on their own or with a scoop of vanilla ice cream, a dollop of whipped cream, or dust with powdered sugar and add fresh raspberries.

Tips for Success:

Here are a few tips to ensure your chocolate lava cakes turn out perfectly:

  • Do not overbake the cakes. The key to achieving a gooey center is to slightly underbake them.
  • Use good quality chocolate chips for an extra delicious chocolate flavor.
  • Feel free to get creative with your toppings. Drizzle with chocolate or caramel sauce or add ripe strawberries or blackberries for a touch of freshness.
