2 pounds of chuck roast or stew meat, trimmed cubed
2 tablespoons of all-purpose flour
1 diced onion

1 bay leaf
1 ½ teaspoons each of garlic powder and sugar
1 teaspoon each of onion powder, dried thyme, and mushroom powder
½ cup of thinly sliced pepperoncini peppers
2 cups of beef stock
2 tablespoons of cornstarch mixed with a few tablespoons of water
Slow Cooker/Crockpot Directions:
1. Pour 2 cups of beef stock into the slow cooker along with all the other ingredients, leaving out the cornstarch for now.
2. Set it to cook on high for 3-4 hours or low for 5-7 hours.
3. About 30 minutes before it’s done, take ½ cup of the liquid from the slow cooker and mix it with the cornstarch until it’s smooth. Stir that mixture back into the slow cooker and let it cook for another 30 minutes.

Instant Pot Directions:
1. Pour 1 ½ cups of beef stock into the Instant Pot and add in all the other ingredients, leaving out the cornstarch for now.
2. Set it to the meat/stew mode and cook on high pressure for 35 minutes.
3. Let the pressure release naturally for about 10-15 minutes.
4. After that, switch to ‘sauté,’ mix the cornstarch with 2 tablespoons of water, and stir it into the pot once it starts bubbling.
