Watermelon Tomato Salad - This refreshing and simple arugula salad is paired with sweet watermelon, red onion, tangy balsamic reduction, and creamy feta. Use multicolored cherry or grape tomatoes to make your dish more colorful and vibrant.
Ingredients for Watermelon Tomato Salad:
- 6 cups arugula
- pound mixed cherry or grape tomatoes
- 6-ounces package Feta Cheese
- 5 cups cubed seedless watermelon (about 3 ½ lbs.)
- 2 tablespoons torn fresh mint leaves
- ¼ cup red onion sliced
- 2 tablespoons balsamic vinegar reduction
- 3 tablespoons olive oil
- flaked sea salt and fresh ground black pepper - to taste
Instructions:
1. Cut tomatoes in half. Set aside.
2. Add arugula, watermelon, tomatoes, feta, red onion, and torn fresh mint leaves to a large mixing bowl. Mix everything together.
3. Drizzle salad with balsamic reduction, olive oil, flaked salt and freshly ground black pepper.
4. Transfer salad into serving bowls and serve immediately.
