How to Make Roasted Grape Ricotta Toast
First you will need Oven Roasted Grapes. The grapes can be made ahead of time. If you have some grapes around, just follow the roasting instructions and you can make this simple, yet amazingly unique toast for your next breakfast or snack.
Our recipe also uses Whipped Honey. Whipped honey can also be easily made ahead. If you don't have whipped honey, simple honey will add the touch of sweetness this recipe needs.
We whipped the ricotta is a high-speed mixer with the whisk attachment. However, this is not necessary if you do not want to. You can simply mix the ricotta with seasonings in a large bowl.
Ingredients:
- roasted red grapes (make ahead)
- whole fat ricotta cheese
- whipped honey (make ahead) or regular honey
- slices of bread (your choice of type, we used sourdough)
- lemon juice
- zest of one medium lemon
- fresh ground pepper
- sea salt
- Fresh thyme leaves, red peppercorns, and lemon zest for garnish (optional)
Instructions:
- Toast your bread slices until they are golden and crispy.
- Place the ricotta cheese, lemon juice, lemon zest, salt and pepper into a high speed mixed with the whisk attachment and whip until smooth. About 5 minutes. Alternatively, you can mix the ingredients with a spatula in a bowl.
- Spread a generous amount of ricotta cheese on each slice of toast.
- Top the ricotta with a handful of roasted grapes, gently pressing them into the cheese.
- Garnish with fresh thyme leaves, red peppercorns, and lemon zest if desired.
- Drizzle with whipped or regular honey.
- Serve immediately and enjoy!
