Filipino BBQ Pork Skewers

Ingredients for BBQ Pork Recipe
You will need skewers either wooden, bamboo (if using these, make sure you soak them in water for about 30 minutes before using them on the grill) or metal and the following ingredients:
- 2 1/2 pounds pork shoulder, most of the fat trimmed and cut into 1-inch cubes
- 6 oz-can 7-up or Sprite
- 1/2 cup banana ketchup**, plus more for grilling
- 1/2 cup soy sauce
- 1/2 cup white vinegar
- Juice of 1 medium lemon
- 1/3 cup brown sugar
- 5 large garlic cloves (crushed)
- 1 teaspoon freshly ground black pepper
- 1/4 teaspoon crushed red pepper flakes (optional)
What is Banana Ketchup
** Banana ketchup is a unique condiment that you may not be familiar with, since tomato ketchup is more common. Banana ketchup is made from a blend of bananas, sugar, garlic, and red food coloring. It does not contain any tomatoes. It is available in most grocery stores in the international foods section. Walmart carries a brand called Jufran banana sauce. And, obviously, Amazon has a selection.
How to Make Filipino BBQ Pork Skewers
- Dice the pork shoulder into one-inch cubes, trimming most of the fat but leaving a little bit on. Place the cubed meat in a large container with a seal. Make sure it’s large enough to hold the meat and the marinade.
- In a separate large mixing bowl, mix together 7-up or Sprite, banana ketchup, soy sauce, white vinegar, lemon juice, brown sugar, garlic, fresh ground black pepper, and red crushed pepper. Stir until well combined and the brown sugar is fully dissolved.
- Pour the marinade over the pork cubes, make sure all the meat is coated. Cover and let it marinate in the fridge for 6-8 hours or overnight.
- When ready to grill: put together the BBQ pork skewers by adding five to six chunks of pork on each skewer. Keep repeating this process until all the meat is skewered. NOTE: If you are using wooden or bamboo skewers make sure you soak them in water for about 30 minutes before using them on the grill.
- Before you start grilling, preheat the grill to a medium heat. Once the grill is ready, place the pork skewers on it and let them cook for about four minutes on each side.
- Using a brush, spread extra banana ketchup on one side of the skewer, flip it over, and cook for a minute. Keep repeating the process. Make sure to check the meat’s temperature, it’s fully cooked at 145 °F. Alternatively, you can use a knife to cut a piece of pork and check the center.
