It is vegetarian, made with just a few simple ingredients and ready in less that 15 minutes. It is perfect to make in the morning and take with you for an afternoon barbeque.
Best Cucumbers to Use
When you're at the grocery store, you'll come across different types of cucumbers. The "regular" ones have a thicker, waxy skin and are the most affordable.
English cucumbers are long and skinny, wrapped in plastic, and are usually pricier. Mini cucumbers, also known as Persian cucumbers, are like English cucumbers but shorter and perfect for snacking.
Any type of cucumber will work for this salad, but we prefer English or mini cucumbers because of their thinner skin and the seeds are usually not bitter. They are also easier to eat without peeling.
To peel or not to peel? You don't have to peel a regular, Persian or English cucumber, but you can and probably should if using regular cucumbers! We like to keep the skin on English and Persian cucumbers for the extra flavor, nutrients and fiber it provides.
Best Tomatoes to Use
As with cucumbers when at the store, you will find a variety to choose from. For this salad we recommend small tomatoes such as cherry or grape tomatoes. These are easy to slice in half and are bite sized. You can also use specialty tomatoes such as sugar bomb tomatoes or gourmet rainbow tomatoes.
Ingredients
- 1 pint container of cherry or grape tomatoes, cut in half
- 1 English cucumber, diced
- ¼ cup fresh dill, chopped
- ½ cup Greek yogurt
- 1 tablespoon freshly squeezed lemon juice
- 1 tablespoon good olive oil
- 1 small clove garlic, minced
- salt and pepper to taste
Instructions
- In a large bowl, combine the halved tomatoes and diced cucumber.
