We have made our own version of this small batch tomato soup. It is the best of both worlds its simple and enough for one or two servings. Not to mention it’s perfect for a cozy night in on the couch … paired with your favorite grilled cheese, of course.

Ingredients:

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves of garlic, minced
  • 1 can (14 ounces) diced tomatoes (we recommend San Marzano tomatoes)
  • 1 1/2 cups vegetable broth
  • 1 teaspoon sugar
  • 1/4 teaspoon fresh or dried basil
  • 1/4 teaspoon dried oregano
  • 1/4 cup heavy cream (optional to make it creamy)
  • 1/4 teaspoon salt (optional to taste, the broth may have enough salt)
  • 1/4 teaspoon black pepper

How to Make Small Batch Tomato Soup

  1. In a medium-sized pot, heat the olive oil over medium heat.
  2. Add the diced onion and minced garlic to the pot. Cook until the onion is translucent and the garlic is fragrant, about 5 minutes.
  3. Add the diced tomatoes (including the liquid) to the pot. Stir in the vegetable broth, sugar, dried basil, dried oregano, salt, and black pepper.
  4. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let the soup simmer for 15-20 minutes to allow the flavors to meld together.
  5. If you prefer your soup smooth, use an immersion blender or transfer the soup to a food processor or blender, and blend until almost completely smooth. Be careful when blending hot liquids.
  6. Return the soup to the pot and stir in the heavy cream, if desired, for a creamy texture. Heat the soup over low heat until warmed through.
  7. Taste and adjust the seasoning if needed. You can add more salt, pepper, or herbs according to your preference.
  8. Serve the small batch tomato soup hot with your favorite garnishes, such as a sprinkle of fresh herbs, croutons, and/or shaved parmesan cheese.

This small batch tomato soup recipe is quick and easy to make, and it yields just enough for one or two meals. It is also the perfect amount for an appetizer for two people.

This recipe is classic and simple; however, you can add a pinch of red pepper flakes or a drizzle of hot sauce for a spicy kick. You can also add small pasta such as Ditalini to the soup to make a heartier and a more filling meal.
