  • small heart shaped cookie cutters optional
  • 4 slices of bread we used sourdough
  • ½ cup ricotta cheese
  • 1 mini cucumber – sliced
  • 4-5 strawberries – sliced
  • 2 tablespoons unsalted pistachios – chopped
  • 2 tablespoons honey
  • ½ teaspoon sea salt
  • ½ teaspoon pink pepper corns - crushed
  • Optional – use small heart shaped cookie cutters to cut strawberries and cucumbers into heart shapes to add a Valentine’s Day theme.
  • Lightly toast bread.
  • Spread ricotta cheese onto each slice of toast.
  • Top with sliced cucumbers, strawberries, and pistachios.
  • Drizzle with honey and season with salt and pepper to your liking.
