Ingredients
  

Seasoned Jackfruit

  • 1 can jackfruit rinsed and diced
  • 1 packet taco seasoning
  • 3 tbsp olive oil

Fresh Green Apple Salsa

  • 1 cup baby cucumbers diced
  • 1 cup green apple diced
  • ½ cup green bell pepper diced
  • 2 small avocados or 1 large diced
  • 1 medium jalapeno diced or less
  • ¼ cup green onion sliced
  • 3 tbsp freshly squeezed lime juice
  • 2 tbsp chopped fresh cilantro
  • ½ tsp sea salt

Sour Cream Sauce

  • ¼ cup sour cream
  • 3 tbsp milk

Tortillas

  • 6 flour or corn tortillas

Optional

  • Extra limes optional
  • Corn chips optional

Seasoned Jackfruit

  • Heat 2 tablespoons of oil in a skillet pan and add rinsed and diced jackfruit. Cook for about 8-10 minutes until the fruit becomes caramelized. Mix in the taco seasoning and remaining table spoon olive oil and mix well. Remove from heat.

Fresh Green Apple Salsa

  • Prepare and mix all ingredients in a large mixing bowl and transfer into a serving dish.

Sour Cream Sauce

  • Mix sour cream and milk together to create a smooth creamy sauce.

Tortillas

  • Warm tortillas either wrapped in wet paper towel in the microwave or on hot stovetop to create charred marks and flavor.
