- 2 slices sourdough bread toasted
- 1 peach sliced
- ½ cup full fat ricotta cheese
- 2 tablespoons light olive oil
- 1 tablespoon unsalted pistachio – roughly chopped
- 1 tablespoon fresh mint – julienned
- peach glaze
- salt and pepper to taste
Grill Peaches
Lightly brush peach slices with light olive oil and place on hot grill or in a grill pan.
Grill 1-2 minutes in each side, until grill marks are achieved.
Toast or Grill Bread Slices
Assemble Ricotta Toast
Evenly spread ricotta cheese over the toast.
Add toppings and drizzle with peach glace.
Optional - cut in half or thirds if preferred.
