Watermelon Goat Cheese Mint Salad

  • 4 cups mixed baby greens
  • 1 cup seedless watermelon – cubed
  • 1 cup butter beans -rinsed
  • ½ cup sliced tomatoes
  • ¼ cup chopped fresh mint leaves
  • 4 ounces pistachio crusted goat cheese balls

Pistachio Crusted Goat Cheese Balls

  • 4 ounces plain goat cheese
  • ¼ cup chopped pistachios
Instructions
 
  • Prepare all the salad ingredients
  • Mix together in a serving bowl or on individual salad plates
  • Add pistachio crusted goat cheese balls and drizzle with salad dressing
  • Scoop the goat cheese and roll into small balls
  • Roll in the chopped pistachios to coat completely
