Watermelon Goat Cheese Mint Salad
- 4 cups mixed baby greens
- 1 cup seedless watermelon – cubed
- 1 cup butter beans -rinsed
- ½ cup sliced tomatoes
- ¼ cup chopped fresh mint leaves
- 4 ounces pistachio crusted goat cheese balls
Pistachio Crusted Goat Cheese Balls
- 4 ounces plain goat cheese
- ¼ cup chopped pistachios
Prepare all the salad ingredients
Mix together in a serving bowl or on individual salad plates
Add pistachio crusted goat cheese balls and drizzle with salad dressing
Scoop the goat cheese and roll into small balls
Roll in the chopped pistachios to coat completely
