Panzanella salad is a traditional Tuscan bread salad enjoyed mostly during the summer.

Ingredients
  

Panzanella Salad

  • 2 cups diced peaches
  • 2 cups sliced mixed cherry tomatoes
  • 2 slices of toasted sourdough bread – cubed
  • 1 cup small pearl mozzarella cheese balls
  • 1 tablespoon thinly sliced basil
  • 1 tablespoon jalapeno pepper chopped
  • 1 scallion sliced

Dressing

  • ½ cup light olive oil
  • ¼ cup white wine vinegar
  • ½ teaspoon sea salt
  • ½ teaspoon fresh ground pepper
Instructions
 
  • Cut, chop and slice all your ingredients. Lightly toast the sourdough bread and cut into cubes.
  • Place all dressing ingredients into a blender and blend well.
  • Place all salad ingredients into a large bowl. Add the dressing and mix well. Transfer into a serving bowl.
